Columnar cactus pitaya

Stenocereus queretaroensis · Cactaceae family

This pitaya grows on a columnar cactus, and its very short life after harvest helps explain the importance of local markets. The same word on a different label may refer to a quite different cactus fruit.

Get to know it

Jalisco’s pitaya grows on a tall, many-branched cactus and hides colourful, seed-speckled flesh under its peel. Some fruits taste sweet, others sharp. In May they’re laid out on beds of fresh alfalfa, and local cooks turn them into ice cream and drinks.

More about the taste

The name pitaya covers several columnar-cactus fruits. Selections range from acidic to sweet, and shouldn't be confused with climbing dragon fruit.

The pulp is colorful, with small seeds and noticeable acidity - a different eating experience from prickly pear.

Growers select for fruit quality, so flavor varies among cultivated selections.
