Get to know it

Pineapple has juicy, sweet flesh, often with a tart edge, wrapped in a tough shell and topped with a crown of leaves. Each patterned piece of that shell belongs to a small fruit: many of them grow together to make the pineapple you slice.

More about the taste

Pineapple combines sweetness with acidity, and varieties differ meaningfully: Queen types are crisp and mildly flavored, while others vary in acidity and core texture.

MD-2 is lower-acid; Smooth Cayenne is higher-acid. Queen is crisp and mild, and Sugarloaf has white flesh with an edible core.

A tasting invitation

Compare a piece from the lower part of the fruit with one from nearer the crown. Notice acidity, fiber and juice separately. Then compare fresh and lightly grilled pieces; heating offers a different culinary experience rather than a way to ripen pineapple.

  1. 1ChooseFlattened eyes

    Look for

    • Flattened eyes
    • Fresh green crown
    • Pleasant aroma

    Ignore

    • Yellow skin
    • Pulling a leaf

Look for sound fruit with flattened eyes and a fresh green crown. Avoid soft areas, mold or a deteriorating crown; yellow skin alone doesn't mean it's sweet.

  2. 2RipenDoesn’t ripen after picking
    Doesn’t ripen after picking

Pineapple does not become sweeter after harvest. Countertop color or softness changes cannot rescue fruit picked before adequate sweetness developed.

Refrigerate ripe pineapple and use it within about a week.

    Rind

The grilled recipe removes the rind and core; the adobo uses pineapple juice. Some varieties have a more tender, edible core.

More tips

A useful detail What looks like one pineapple is a fused structure built from many flowers, called a syncarp. The pattern of individual fruitlets on the outside makes this visible.

In Hawaii, pineapple bound for distant markets is picked less mature than fruit meant for local eating, so the same variety can taste different at home and after shipping.

How to serve it first

Trim the shell and remaining tough eyes, then slice the flesh around the firmer central core to your preferred texture. Taste a fresh piece before choosing whether to serve the rest plain, grill it or add it to a savory salad.
