A properly mature mango changes after harvest in more ways than softness.

instrumental study · Southern Florida; measurements at University of Florida, Gainesville · 2019

Read the evidence

In the 2019 Tommy Atkins lot, one week at 20°C was associated with soluble solids increasing from 8.9% to 13.3% and titratable acidity decreasing from 0.84% to 0.39% as citric acid. These composition changes accompany ripening but do not themselves establish a flavor optimum.
