Hass
An avocado that began as a chance seedling and went on to dominate the global market.
Origin · La Habra Heights, California, United States
Released 1936
Taste & texture
Neither peel nor storage temperature shows whether an avocado's flesh is ready to eat.
sensory study · Fruit imported from Peru; experimental storage at University of Turin and trained panel in Alessandria, Italy
Read the evidence
After ethylene ripening and 96 hours at 8°C or 17°C, the trained panel did not distinguish the two Hass treatments or a retail ready-to-eat Hass comparator in projective mapping. Pinkerton and Arad occupied different sensory positions; texture attributes were particularly discriminating.

Cool holding limits water loss in an already-ripe avocado, slowing how fast it shrivels.
instrumental study · Peru-grown fruit imported through a northern Italian ripening company; tested at University of Turin
Read the evidence
The study reports weight loss of 0.57% at 8°C and 3.46% at 17°C after 96 hours in its ethylene-ripened Hass lots. This instrumental difference should be kept separate from the sensory analysis, which did not distinguish the Hass samples.
